Picnic Snack and Lunch Recipes Kids Will Love

For all the parents out there--- here's a list of kid-friendly snack and lunch recipes for you to pack up that picnic basket and hit the road to your nearest beach or park for a safe and social distanced outing! These are easy-peasy 20 minutes or less recipes. Let me know how these turn out for your family! 

Recipes: 

1) Joe-Joe's Truffles (no-bake)

Ingredients:
  1. One box of Trader Joe's Chocolate Joe-Joe's 
  2. One package of cream cheese 
  3. One package of semi-sweet chocolate chips
Directions:
In a food processor/blender-- process all the cookies until finely ground up. They should be practically powder form and mush. Set aside 1/2 cup of the ground joe-joe's for later. Mix in the package of cream cheese with the rest of the joe-joe's mixture thoroughly.  Scoop spoon fulls and roll into balls placing on parchment paper. Set aside. 

Melt the semi-sweet chocolate chips by the double boil method and temper the chocolate. Once melted, place each ball on a fork and gently dip the ball in the melted chocolate until covered. Place on the parchment until cooled and hardened. Repeat for each truffle ball. Once all of them are coated, take the 1/2 cup of ground joe-joe's and sprinkle the cookie crumbs on top for a little beautification! Enjoy! 






2) Caprese Salad BLT

Ingredients:
  1. Trader Joe's Fresh Mozzarella Cheese Log
  2. Beefsteak Tomatoes
  3. Sandwich bread of your choosing
  4. Trader Joe's Full Cooked Bacon
  5. Fresh Basil
  6. Trader Joe's / Trader Giotto's Balsamic Glaze 
Directions: 
Microwave the full cooked bacon before using. Toast bread. Layer the basil, glaze, tomatoes, mozzarella and the bacon between slices, adding a third slice in the middle. Voila--- bon appetite! 

3) Chicken Souvlaki w/ Tzatziki Sauce 

Ingredients:
  1. Trader Joe's Natural Chicken Breasts or Tenderloins 
  2. Trader Joe's Tzatziki Dipping Sauce
  3. Tomatoes
  4. Onions
  5. Butter Lettuce
  6. Trader Joe's Whole Wheat Pita Bread
Directions:

Grill onions and chicken, cutting the chicken into cubes with a little oil (preferably grapeseed). Grill until the onions are soft and the chicken browns on all sides. Toast the pita bread in the oven for 10 minutes on 350 degrees. Layer the pita with the chicken, onions, diced tomatoes, lettuce and top with the Tzatziki sauce-- and enjoy! 

4) Fruit Filled Sugar Cones Topped with Whipped Cream

Ingredients:
  1. Trader Joe's Organic Sugar Cones
  2. Blueberries
  3. Cantalope
  4. Strawberries
  5. Kiwi
  6. Whipped Cream 
Directions:

What a healthy alternative to loading up on sugary ice cream! Fill the cones with a little fruit salad and top with Trader Joe's natural whipped cream and you have a delicious and refreshing summer time treat the kids will surely enjoy! 

5) Chocolate Hummus with Apples, Bananas and Graham Crackers

Not so much a "recipe" as must grab-and-go item at Trader Joe's!! Pick up TJ's Chocolate Hummus (If you haven't tried it-- and you're a little apprehensive, so was I-- but I was so pleasantly surprised to find it was like brownie batter!!). Pairs very well with fruit and those TJ's Graham Crackers! Delish! 

6) Truffle Brownies w/ Peanut Butter Cups

Ingredients:
  1. One box of Trader Joe's Truffle Brownie Mix 
  2. One container of Dark or Milk Chocolate Peanut Butter Cups
  3. 2 eggs
  4. 1 stick of unsalted butter
Directions:
